Celery Seed

Celery has been a widely used, characteristic ingredient in various dishes in China since the 5th century. Fresh, seasonal celery plants, available at local farmers markets, can grow up to a meter tall, are bright green and full of life. Celery is known for its delicate, strong, sweet and spicy aroma. The plant takes two years to fully mature and begin to produce small fruits that are tan or brown. The essential oil is concentrated mainly in the seeds and is obtained by steam distillation.
